Honey Garlic Chicken Stir Fry

A surprisingly quick and easy stir fry. I'm always a fan of a one-dish dinner!




Makes 4-5 servings

Ingredients:

2 T Olive oil
1 bunch of asparagus broken into bite size pieces
1 8 oz. package of sliced mushrooms
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup honey
1/2 cup light soy sauce
4-5 boneless, skinless chicken breasts, cut into bite size pieces
12 minced garlic cloves
4 tsp. sesame oil

In a small bowl, mix honey and soy sauce, add the chicken to soak while sautéing the veggies. 

Heat the olive oil over medium high heat and add asparagus, mushrooms, salt and pepper. Sauté for 5-10 minutes until cooked through. After cooked, move to a large mixing bowl.

Remove the chicken from the marinade and cook about 3/4 of the way through (still slightly pink in the center). Add the garlic and remaining marinade sauce and cook chicken through.

Toss with asparagus, mushrooms and sesame oil and serve on top of steamed jasmine rice! It was a hit with the whole family.
