Saturday-Lunch- after the ballgame, Dinner-Pot Roast, Carrots, Mashed Potatos Sunday- Ranch Chicken , Baked Potatoes, Salad Monday- Skinny Chicken Casserole  (replace black beans with chili beans, and replace onions with onion powder) Tuesday-Swim Meet-Pick up Subway sandwiches? Beef Stroganoff

Prep Time: 15 Min. Total Time: 30 Min. Serves: 10 Ingredients:  16 oz. Wide Egg Noodles 4 T Vegetable Oil, divided 1 Onion chopped (I substituted Onion Powder) 16 oz. Mushrooms, sliced Salt and Pepper to taste 32 oz. brown gravy 2 cups reduced fat sour cream 2 tsp. paprika 4 tsp. dried parsley Directions: 1) Cook egg noodles according to package directions. Drain, cover and set aside. 2) Meanwhile, in a large skillet, heat 2 T of oil over medium high heat and salute the onions and mushrooms 5-7 minutes. Remove from pan and set aside. 3) Add the other tablespoon of oil and season the beef with salt and pepper. Cook until beef is browned, about 3-5 minutes. 4) Lower heat to medium and add gravy, sour cream, paprika, parsley, onions and mushrooms. Cook and still until thickened and bubbly. 5) Serve over hot noodles!

Spaghetti Sauce

Thick Spaghetti Sauce 1 lb. Italian Sausage 1 lb. 85/15 Ground Beef 1 6 oz. tomato paste can 2 cloves of garlic ~64 oz. Prego Traditional Italian Sauce dash of salt dash of pepper 1/2 tsp. Oregano Cook ground beef, Italian sausage, garlic, salt, pepper, oregano on high. Drain and add tomato paste and Italian sauce. Let simmer on low for 30-60 minutes before serving.

Grammies' Macaroni and Cheese Chicken Casserole

A nice homestyle meal perfect for a snowy day! I make a double batch for my family since the boys love it so much! Ingredients: 2 Boxes of Kraft Macaroni and Cheese 2 cans of Cream of Chicken 1 can of milk 1 sleeve of Ritz Crackers 1 1/2 pounds of Chicken Pats of butter Pepper to taste Cook the chicken and cut it into cubes (I bake mine). Prepare the Macaroni and Cheese as packaged. Combine the Macaroni, chicken, cream of chicken soups, milk and a handful of crumbled Ritz and pour into a casserole dish. Sprinkle some pepper on top. Bake at 350 for 15 minutes, add the remaining Ritz crackers in a layer on top with a few small pats of butter and bake another 15 minutes.
